Recipe - Fish Paste

Ingredient:
1 ikan tenggiri, about 750g, cleaned and wiped dry

Ingredient A:
1/2 tsp salt, mixed with 35ml water

Ingredient B:
1 tsp salt, mixed with 1/4 tsp pepper
1 1/2 tbsp corn flour, 100ml water

Method:
1. Using a sharp knife, slit and debone the fish.
2. Using a metal spoon, scrape out flesh from the bones and 2 sides of skin.
3. Using the back of a chopper, pound the fish meat until very fine, adding A while pounding.
4. Transfer fish paste into a mixing bowl, stir in one direction until very sticky, adding B while stirring.
5. Gather up fish paste and hit against the base of the mixing bowl 5-6 tims to firm up the paste.

One bowl full of fish paste, but I only use half of it to do the Golden Pepper Prawn Fritters, the rest of it turned bad because I didn't know that I need to store in the freezer, wasted! :(

Recipe - Chocolate Brownies

Ingredients A:
225g butter
200g chocolate chips

Ingredients B:
250g egg
200g caster sugar

Ingredient C:
150g plain flour, sifted with 5g baking powder
200g walnut, chopped and toasted (besides walnut, I add in macademia nut as well)

Ingredients for chocolate ganache cream:
185g diary wipping cream
30g fresh milk
460g cooking chocolate, chopped

Method:
1. Chocolate ganache cream: bring the whipping cream to boil then remove from heat. Add in cooking chocolate and fresh milk and stir until smooth. Allow to cool.
2. Brownie: cook butter until it melted, add in chocolate chips and mix well. (Do not melt chocolate chips completely, they should still in small chips form)
3. Beat ingredients B until creamy. Add in butter chocolate mixture, plain flour, baking powder and half of the chopped walnut, mix gently by using hand. (I think I made a mistake this part, the ingredients not being beaten thoroughly)
4. Pour mixture into a baking mould, bake into a preheated oven at 180C for 40 minutes or until cooked.
(Since I made a mistake in step 3, so, the cake still very "liquid" after 40 minutes)
5. Remove cake and leave to cool. Spread the whole cake with chocolate ganache cream and sprinkle some chopped walnut and chocolate chips on top. Serve after the cream is set.
(I made another mistake, I forgot to leave to cool and spread the chocolate ganache cream, so, the cream doesn't stick lo)

Note: The cake will be taste good if served at the next day.

Recipe - Roasted Chicken with Spices

Ingredients:
2 chicken whole legs (I use debone chicken drumstick)

Spices A (grinded): (opps, now only I realize this need to be grinded)
1/2 tsp cumin seeds
1 tsp Szechuan peppercorn
1 tsp salt

Spices B (mixed):
3 tbsp chopped shallods
1/2 tbsp chopped garlic
1 tbsp oil

Method:
1. Mix chicken with spices A and marinade for 1 hour.
2. Put chicken into a preheated oven and roast at 200C for 30 minutes. Cover chicken with spices B and roast for another 15 minutes.
3. Remove, cut into serving pieces and serve.

Recipe - Pig Shank in Sweet & Sour Sauce

Ingredient:
500g pig shank

Marinade:
1 egg
2 tbsp water
1 tbsp shaoxing wine
1/2 tsp salt
1 tbsp worcestershire sauce
1 tbsp corn flour
2 tsp bicarbonate of soda

Sauce:
3 tbsp black vinegar
1 tbsp worcestershire sauce
2 tbsp tomato sauce
1 tbsp chilli sauce
2 tbsp sugar
4 tbsp water
1/2 tsp salt

Method:
1. Cut pig shank into thick slices and pound with back of knife until tender.
2. Add in marinade and mix well. Marinade for 1 hour.
3. Heat up oil, put in shank and pan-fry until both sides are golden brown. Pour away excess oil.
4. Add in sauce and cook until the sauce is thickened. Dish up and serve.

Recipe - Golden Pepper Prawn Fritters

Ingredients:
10 medium size prwans
5 slices white bread
150g fish paste
1/2 tbsp peppercorn, crushed (I put pepper powder, instead of peppercorn)
1 tsp corn flour
2 tbsp water

Marinade:
1/2 tsp sugar
1 tsp corn flour
Dash of sesame oil and pepper

1 egg, beaten
2 tbsp white sesame seeds (I don't have sesame seeds in my fridge, so I just skip it)

Method:
1. Remove shell and vein from prawn. Clean and drain well. Mix with marinade.
2. Trim the sides of bread. Flatten and cut each into 4.
3. Stir fish paste, peppercorn, corn flour, water until well combined. Spread the mixture onto a peice of bread, cover with another piece and spread the mixture again. Put a prawn on top.
4. Dip into beaten egg and coat with sesame seeds. Deep-fry in hot oil until golden brown. Dish up and serve.

Golden Pepper Prawn Fritters - 2nd Attempt

Since I still have bread, prawn and fish paste, I decided to do the dish again. This time I learn from mistake, this time the colour look nicer right?

My cooking 4 - Roasted Chicken with Spices

My final dish. This dish even easier. Just need to marinade it with spices, put into the owen and roast it for 35 minutes under 200 degree celcius. The most difficult part was cutting the onion, eyes get very irritated. Somemore I made a mistake, have to put in onion and roast together with the spice, but I forgot. End up, I add the onion in and roast to another 10 minutes. Good too, can roast all the fat away!

My cooking 2 - Brownie

Although this is not my first time baking cake, but baking brownie is my very first time. Kind of messy, cause of the chocolate, very sticky, difficult to handle, and a lot of procedure. Buying only the ingredient cost me RM35, expensive!

Coat with the chocolate paste after the brownie take out from the owen. Actually according to the recipe, have to wait for an hour, let the brownie cool down first, but I missed the line and coat right after I take out. Opps


:( the brownie doesn't look so good. I consider this as a fail.

My cooking 1 - Golden Pepper Prawn Fritters

I can only cook while my mom's not at home. She always said I mess up her kitchen, and I am slow, careless... yup, no objection, I admit I am. So, this time, she went to China with my dad for 8 days, the kitchen and house are all mine.
Yesterday night checked through my mom recipe, chosing which I want to cook and what "ingredient" I need to buy.
This morning, I went to the pasar with my list of "ingredient". Obviously, everybody know I don't belong to pasar, but all the uncle, antie very helpful, they don't over-charge me and they know I don't know how to choose what I need, so they will ask me how am I going to cook it before recommand things for me. Like the pork stall auntie, initially she thought I want the meat to cook in soup, and actually have cut the meat for me already, then later she saw me holding the list, knowing that I was so "fresh" in cooking and buying thing from pasar, she asked me what I want the meat to cook for? Then I want to cook something like steak with tomato and chilli source. Wah, she so good, put down the meat and cut another leaner meat for me.
Since tonight I'm eating alone, so I only cooked for 1 dish - golden pepper prawn fritters. But first of all I need to prepare the fish paste. Here's the fish paste that I do. Believe me, this is a very tiring procedure, need to scrape out the flesh, then have to pound, stir with some seasoning until it become sticky.
